Raunchy Risotto


This is a recipe for a tasty and cozy risotto dish. It features diced chicken breast, brown onion, garlic, mushrooms, and parmesan cheese. The risotto rice is cooked in a mix of chicken stock and white wine, and seasoned with herbs for added flavor. It's a simple but satisfying dish that's perfect to enjoy on a cozy night in.

  • Pan, preferably heavy (cast iron or stainless steel) but any pan will work


  • Chopping board


  • Chef’s knife


  • Wooden spoon or rubber spatula


  • Jug (mixing vessel)
  • 1 litre chicken stock


  • Diced chicken breast


  • Brown onion


  • Garlic cloves


  • Risotto rice


  • Some cheap white wine


  • Mushrooms, preferably button


  • Parmesan!

This is a great meal to get a little adventurous and thro in the things that you like. YOu can really just load the taco up and see what works for you. Got a favourite source you got from a farmers market, just throw it in!

The all important method......

Step 1

Cook diced chicken breast and onions together in a pan until both are slightly browned. Season with salt and pepper.

Add any other veggies you like such as mushrooms, and stir in some garlic.

Add your risotto rice and pour in a generous amount of white wine. Let that wine absorb!

Add some thyme, mixed herbs, or any other green herbs you like.

Slowly add chicken stock as the risotto simmers as described in the take note section

Finally, add in a ton of parmesan cheese and stir it all up. Then serve with a little parmesan on the top.
