Potato and Cauli Curry

  • We prefer a nice Garlic Naan with this however normal bread as well as a side of  rice can be served as well.
  • Spinach isn’t necessary however it adds some colour to the dish. You can always throw in some frozen or fresh peas as well.
  • You can also garbnish with some fresh coriander if you have some lying around because why not…. 
  • Do all your prep at the start to make everything easier.

This is a great meal to get a little adventurous and thro in the things that you like. YOu can really just load the taco up and see what works for you. Got a favourite source you got from a farmers market, just throw it in!

The all important method......

1. Cut the potatoes into bite-sized pieces and place them in a large pot of boiling water. Part boil them for about 10 minutes, until they are soft but not mushy. Drain and set aside. While the potatoes are cooking, chop the cauliflower into small florets.

2. Heat some oil in a frying pan and add the cauliflower. Fry until it is lightly browned, then remove from the pan and set aside.

3. In the same pan, add some more oil and fry the onions until they are soft and translucent. Add the part-boiled potatoes and fry until they are browned. Add the cauliflower to the pan, along with the turmeric, cumin, and gram masala. Stir well to combine.

4. Add the garlic and ginger to the pan and cook for a few minutes, until fragrant. Add the chopped tomatoes and curry paste to the pan. If the mixture is too thick, add a little water to thin it out.

5.Finally, add the spinach to the pan and stir well. Cook for a few minutes until the spinach has wilted. Serve hot with naan bread or some bread on the side, if desired. Enjoy!
