  • Pan, preferably heavy (cast iron or stainless steel) but any pan will work

 

  • Chopping board

 

  • Chef’s knife

 

  • Wooden spoon or rubber spatula

 

  • Jug (mixing vessel)

 

  • Large saucepan

 

  • Colander
  • Shallots can be swapped for a white onion

 

  • Taglitelle is recommended however any available pasta would be sufficient

 

  • Fresh herbs is preffered as it gives a better taste, however dried herbs can also be used

What you will need

The all important method......

Step 1

Do all your prep at the start to make everything easier. While pasta is boiling prep veg: slice mushrooms, dice shallot and garlic, pick thyme, roughly chop parsley, grate parmesan.

Step 2

Fill a pan with hot water and put on high heat. Add salt to water (1 teaspoon per litre) and add pasta 100g per person. 12 mins or follow instructions.

While pasta boils fry mushrooms on medium-high heat. No oil to start as it allows the water to be drawn out. Once they get good colour and the liquid has boiled off, move the mushrooms around and add a little oil or butter, increase the heat until oil absorbed and mushrooms fully cooked.

Step 4

Reduce heat, add shallots, garlic and thyme. Cook for 5 mins, then add stock (and wine), reduce for 5 mins.

Once reduced turn heat to lowest and add cream. Stir in parmesan and add chopped parsley.

Mix sauce with pasta, more parsley/parmesan to garnish.
