What?

This mushroom stroganoff pasta recipe is the perfect blend of comfort food and gourmet flavors. It's easy to make and serves two, so it's perfect for date night or a cozy dinner with your bestie.   • Tortlillas cn come in all shapes, sizen and tastes. Really just use what you can get your hands on however we prefer the small corn street taco kind!

This is a great meal to get a little adventurous and thro in the things that you like. YOu can really just load the taco up and see what works for you. Got a favourite source you got from a farmers market, just throw it in!

What you will need

For the Marinade

To marinade the chicken, combine garlic, cumin, oil, lime juice, salt, pepper, and cayenne in a mixing bowl. Mix the ingredients well. Add the chicken to the mixing bowl and coat it well with the marinade. Cover the mixing bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for best results.

The all important method......

1. Do all your prep at the start to make everything easier. While pasta is boiling prep veg: slice mushrooms, dice shallot and garlic, pick thyme, roughly chop parsley, grate parmesan.

2. Heat up a large skillet, grill pan or a bbq. Once hot, add the marinated chicken to the skillet and cook for 4-5 minutes per side, or until fully cooked through. Them cut to the desired size to fit in the Taco.

3. Warm up your tortillas by microwaving them for 20-30 seconds or place them in a pan for short period of time.

4. To assemble your tacos, place a spoonful of the chicken on a tortilla and top with the tomato mixture. Add any additional toppings you desire, such as cheese, avocado, or sour cream. Enjoy!
